I have way ...OMG spinach is my favorite thing ever! I have way back in the past made a spinach cake, need to try pancakes though. <br />However, for the last several months I've had some variation of green oats almost every single morning. I put almost 2 cups of pureed spinach in there! And with sweetener and fruit, it's so good! For the cold version, since Houston is a million degrees, I stick it in a blender with some coconut milk, soy, or yogurt, maple syrup or agave and pour over granola and fruit.
